On these tasting menus  Dishes & Teas, the Chef offers you  raw, fresh and seasonal products, re-visited and always worked with love and creativity. The Chef does not change anything in his cuisine. In this sense, the Meals and Teas menus are developed on his cuisine. This is not a tea kitchen. Naja,  intervenes by selecting the most appropriate teas, according to his experience and his sensitivity, to distinguish himself in a gourmet, intelligent and harmonious way, on the menus, which the Chef submits as his inspirations and the seasons.
After tasting the dishes and listening
  the Chef tell her about his products, she finds and puts on each of them, the teas that she thinks are the most likely to trigger surprise and harmony in the mouth. Pairings are sometimes made on a single ingredient in the dish, an aroma, scent, texture, flavor, sometimes on the integrity of the  flat, or in contrast. It takes a good knowledge of products and teas so that, like an oenologist, the associations are magical and remarkable.

At 47, Chef David Rathgeber has solid experience:
From Philippe Groult (Amphycles) via Guy Legay (Ritz), Gérard Vié Trois Marches) and Alain Ducasse where for 14 years, he occupied all the brigade positions. From Louis XV in Monaco to the Plazza Athénée Paris, before taking over the kitchens at Lyonnais and
  at Benoit, where he won a star in 2006.
He has also exercised his talents at Benoît New York, in Japan, in Russia, in South America, and is in addition to that, daily, called upon for gastronomic weeks all over the world.
The Chef is involved in the process, alongside Nadja, who convinced him of the nobility of single-origin teas. He is aware, as a professional in the catering trade, that, just like the quality products he uses for his cooking, Tea, as a local and seasonal product, also has its place there.
