Taiwan Oolong C. Tung Ting
Description
The basis of this specialty is Jade Tung Ting Oolong from the Nantou district in the Taiwanese highlands. The production principle is similar to that of jasmine tea. Roughly equal parts of finished tea leaves are mixed with pieces of dried cinnamon, then gently heated in a low-temperature oven. The ingredients are then left to "sit" together for a week before sifting in the cinnamon again. The end product is an aromatically sweet semi-fermented green tea with a subtly sweet and fruity cinnamon note.
