- 🕙3 minutes in classic teapot or 2 minutes in Khusu for (5g) to re-infuse
Prefer quality water , for any noble tea in general, but all the more so for "Gyokuro", high-end teas which are infused at low temperature to preserve the quality of the leaves.
At low temperature, the faults of water of poor quality or too rich in minerals are strongly felt and really alter the virtues of the infusion.
Méthode occidentale (théière / kyusu)

Eau : filtrée, faiblement minéralisée

Température : 85–90 °C

Dosage : 3 g pour 200 ml

Temps d’infusion : 2 à 3 minutes
2 min → tasse très florale, fraîche, très “japonaise”.
3 min - tasse plus construite, plus wulong, avec plus de fruits jaunes et de texture.
Réinfusions

2ᵉ infusion : 85–90 °C, +30–40 s

3ᵉ infusion : 90 °C, +45–60 s
Les passages suivants mettent en avant le côté floral / agrume / minéral, le végétal se fond peu à peu.

En Gong Fu, il dévoile progressivement : fleurs - agrumes - fruits jaunes - noisette / amande fraîche.

Parce que c’est un wulong japonais rare, issu d’un terroir précis : Kozeto, Shizuoka, dans un pays où les wulong restent encore très confidentiels.

Parce qu’il est élaboré à partir du cultivar Kôju, cueilli à la main, sur un volume très limité, puis travaillé en thé légèrement fermenté (semi-oxydé).

Parce qu’il se situe à la croisée des chemins : fraîcheur végétale japonaise + bouquet floral et fruité de wulong, avec une grande finesse.

Parce qu’il offre une liqueur claire, lumineuse, aux notes de fleurs blanches, d’agrumes délicats et de fruits jaunes, sans torréfaction lourde ni amertume.

Parce qu’il est idéal pour les amateurs de thés verts japonais qui souhaitent s’initier aux wulong, et pour les passionnés qui cherchent un profil vraiment différent dans la galaxie des thés d’origine.
