Tie Guan Yin n’est pas un oolong parmi d’autres : c’est l’un des grands piliers de l’histoire du thé chinois. Originaire d’Anxi, dans le Fujian, il porte le nom de la déesse de la Miséricorde, Guanyin, et concentre des siècles de savoir-faire : cueillette fine, oxydation partielle millimétrée, roulage en perles serrées, cuisson maîtrisée. Un Tie Guan Yin réussi est la signature d’un vrai artisan – c’est d’ailleurs l’un des thés “test” des acheteurs et dégustateurs professionnels.
Son profil aromatique – orchidée, fleurs blanches, végétal tendre, touche crémeuse – est devenu un repère mondial pour les oolongs semi-oxydés. On décrit souvent les autres oolongs par rapport à lui : plus ou moins floral, plus ou moins crémeux qu’un Tie Guan Yin.
C’est aussi un thé passerelle idéal : suffisamment expressif pour les connaisseurs, mais d’une limpidité telle qu’un débutant peut l’aimer immédiatement.
Servir un vrai Anxi Tie Guan Yin, c’est donc proposer bien plus qu’un “thé floral” : c’est ouvrir la porte d’une tradition emblématique du Fujian, d’un style qui fait référence et d’un goût que tout amateur de thé devrait rencontrer au moins une fois dans sa vie.
